July 23rd : ANOTHER METHOD OF MAKING GINGER BEER
Boil, for ten minutes, in a gallon of water, half an ounce of white ginger sliced, and a pound of loaf sugar;
pour this upon the peel of one lemon, and the juice of two ; let it stand covered till nearly cold, then add a dessert-spoonful of good yeast. In twelve hours strain through a cloth, bottle it off, securing the corks as before directed. This will be ready for use in a couple of days.
