January 15th : BEET ROOT AND ONION
A root of beet well boiled, and its outside coat taken off, served to table with a Spanish onion boiled, are admirable accompaniments to either beef or mutton roasted. If you reside in the country, and can easily procure cream, stew the onion in it : the beet root requires only plain boiling.
These vegetables should be eaten with a little salt and Cayenne, with the gravy of the joint poured over them. In dressing them, you can judge by the outside skin of the beet root being easily detached, and from the softness the onion attains either in water or cream .
