October 22nd : CRANBERRY TART
Wash a quart of berries in several waters, dry them on a coarse cloth, and pick them carefully. Mix them in a basin with a quarter of a pound of finely powdered white sugar, squeeze the juice of half a lemon over the fruit. Put all into a pie-dish, have a light paste ready for the top, and bake for forty minutes.
Sweden, Russia, and America supply us with these berries; those from the first-named country possess most flavour.
