Twelve minutes roasting should be allowed for every pound the joint weighs; it should be well basted with fresh butter, and a light sprinkling from the flour dredger
The usual method of carving it is to separate the shoulders from the ribs, squeeze a Seville orange over the newly cut meat, sprinkle it with Cayenne pepper and salt, and put two or three small pats of butter between the joints; these melt and amalgamate with the orange juice and the gravy ,and form a piquant sauce for the dish, whilst mint sauce is served separately.
