July 19th : HASHED BEEF
Put the gravy of the meat into a stewpan with a pint of water, a tea-cupful of mushroom catchup, half an onion chopped very fine, half a tea-spoonful of salt, and a third of Cayenne; boil for about ten minutes, dip out a cupful of the liquid, and rub a table-spoonful of flour in it, then stir it well into the stewpan, and let all boil for ten minutes; pass it through a sieve, return it to the pan, put in the slices of beef, and just before taking up throw in half a wine-glass of tarragon vinegar.
