October 6th : PEACHES IN BRANDY
Peel and cut halfa dozen peaches, not too ripe, into quarters, blanch and bruise the kernels; put these and the fruit into a large jar, with a quart of French brandy, half a pint of syrup a tea-spoonful of cinnamon, half a dozen cloves, and a blade of mace, all reduced to powder.
Close the jar very tightly, shake it as often as possible, and at the end of a month strain the liquor through a jelly-bag, and divide your fruit and syrup into smaller jars.
