November 29th : PEAS PUDDING
Tie up, loosely, in a cloth, a quart of split peas, put them into a saucepan of cold water, and let them boil for two hours and a quarter, rub them through a coarse sieve into a dish, stir in an ounce of butter, a spoonful of salt, and a few grains of Cayenne; beat up the yolks of a couple of eggs, and mix these wel l with thepeas, &c. Tie up the pudding, in a well floured cloth, as tightly as you can, and give it another hour's boiling.
