December 24th : PLUM PUDDING
An excellent pudding can be made with the follow ingredients:
Half a pound of flour, half a pound of grated bread, a pound of currants, well washed and dried, a pound of raisins stoned and cut, the peel of a lemon finely chopped, an ounce and a half of mixed spice, an ounce of butter, two ounces of sweet almonds cut small, six ounces of candied orange, lemon, and citron peel, four eggs, a tea-spoonful of salt, two of sugar, and three wine glasses of brandy.
Mix all these together well, adding as much milk as necessary to make the mixture of a proper consistency. Boil in a melon shaped mould for eight hours.
