June 29th : POTTED SHRIMPS
After boiling in water, with abundance of salt in it, pick the fish carefully; for a pound use a salt-spoonful of mace in powder, the same quantity of allspice, a quarter of a grated nutmeg, and three-fourths of a tea spoonful of salt, and one-fourth of Cayenne pepper; put all this into a mortar with a bit of butter the size of a walnut, and pound it till it be reduced to a thick and well-mixed paste.
You may now pot it, and take care to cover the surface with clarified butter, and tie down with bladder.
