A very pretty garnish for fish, flesh, or fowl, may be made by chopping the cold fragments of either, as the case may require, with some lemon-peel and salt; then stir into veal stock thickened with flour in the stewpan.
When cold, make the mixture into balls, and roll them in egg and bread -crumbs. Let these balls be fried, and put round the dish.
