January 4th : ROAST MEAT
That old fashioned implement the spit is fast falling into disuse, and for the best of reasons, — the insertion of such a body of steel or iron into the very centre of the joint, naturally allowed the juices to escape; and if the spit was not kept perfectly bright and clean, the meat which came in contact with it would become tainted.
A cradle-spit is a sensible invention, but it is seldom required, except for a haunch of venison, a very large sirloin, or a roasting-pig. A good pendant jack, with a collection of hooks, suited to the size of joints, poultry, hare, & c ., & c ., answers every purpose.
