October 18th : SAGO
A very pleasant supper dish, and an acceptable one to an invalid, is sago properly prepared.
Soak the quantity intended for use for an hour in cold water, pour this off, and wash it in fresh spring water; let it simmer slowly till it becomes transparent; to every tea cupful add a glass of port wine, and three lumps of sugar; boil it up with a stick of cinnamon, and serve it with dry toast.
