April 4th : SPANISH CUSTARDS
Peel a couple of Seville oranges thin, so as to avoid the white spongy portion that surrounds the fruit; boil the rind till it is quite tender; beat it up in a mortar into a pulp, then squeeze the juice of the oranges
upon it, through a sieve to avoid thepips; add a glass ofCognac brandy, half a pound of loaf-sugar in powder,and the yolks of eight eggs. Beat these well together till completely mixed, then by degrees pour into a quart of cream made boiling hot. Stir well till all the in gredients are nearly cold, then pour the mixture into appropriate cups, and set them in a vessel with cold water reaching within half an inch of their tops, the custards by this means will speedily become set, and fit for use.
