January 9th : SWEET BREAD
Is usually boiled and served with parsley and butter, and in this form is an excellent and delicate dish for a valetudinarian.
If, however, you desire to have something more savoury at your board, let the sweet bread be well secured with small twine, and roast it before a good bright fire, taking care that it be constantly basted with plenty of fresh butter, and that you allow it twenty-five minutes or half an hour.
