The Epicure's Almanac or Diary of Good Living
September 17th : TAINTED GAME
Should grouse or partridge reach you that are, as Pedrigo Potts observed of his fish, “Decidedly on the go!” have them carefully picked and drawn, and immersed in new milk ; let the birds remain in their lactean bath till the next day, when they will be found quite fit for cooking.
One thing I have observed, that the milk in which “high game” has been placed becomes so noxious, that neither cat or dog, in the pangs of hunger, can be tempted to taste it.
